China's National Culinary Competition ended Friday, when those remaining from the 5,000 chefs who took part in competitions around China accepted their awards.

During the competition, each chef prepared a traditional dish and an original dish at the same setting. The chefs were tested on their mastery of culinary techniques, such as their skills with a knife, their work with a wok and their dish's presentation.

The judges were fearsome critics. According to the leader of the judges, 30 percent of contestants possess excellent basic skills, while the remainder have only mediocre or substandard skills.

The judges said that veteran chefs had the technical skills while the younger ones had the imagination. Experts said that the masters need to do more mentoring of the newcomers.

The competition excluded food stuffs such as sea cucumber, which was deemed too expensive, and shark's fin, which was considered unethical.

Renowned food writers and critics on the judging panel handed out 200 gold prizes in several categories.
